北京和江苏,一北一南,最短车程也就700公里,一个是美食天堂,一个是烹饪大省,两者在餐饮上都有哪些差异?在餐饮从业人员看来,南甜北咸或者是南米北面,显然不是京苏两地餐饮最本质的区别。随着菜系融合、原料普及以及口味改变,这种因气候温度变化、饮食习惯不同而造成的地域餐饮特色差异,已经变得越来越小。而地方餐饮政策、餐饮经营理念、扶植力度大小等因素,正成为影响餐饮规模的主要原因。4月下旬,在第六届全国烹饪技能竞赛第二阶段单项决赛期间,来自江苏的参赛选手除了在赛场上大显身手、斩金夺银外,还在赛场下看先进、找差距。在考察了北京全聚德、东兴楼等餐饮企业和北京较有特色的小吃街后,来自江苏的餐饮从业人员,对京苏两地近几年来的餐饮业发展进行了思考。
