陕西关中人工栽植的火棘，成熟果实相对含水量、灰分、粗纤维、粗脂肪、可溶性蛋白、有机酸、VC、VE、水溶性果胶、单宁以鲜果计算分别为74．28％，0．50％，8．15％，5．28％，0．016％，0．84％，0．14％，0．0041％～0．0045％，3．14％，0．094％；总糖为5．64％，其中可溶性糖3．80％，还原性糖3．08％，蔗糖0．47％，果糖1．45％，葡萄糖2．13％；氨基酸以谷氨酸含量最高达2．368％，其次为天冬氨酸0．887％，精氨酸0．772％，人体必需的氨基酸高达2．26％，婴幼儿必需的氨基酸达0．92％。钙、铁、锌、硒分别为387．5，72．5，16．5，3．5μg／g。火棘果实内不含淀粉，所有有机物的含量均随果实成熟后采摘期的延长而下降。
