目的了解原平市饮食行业餐具卫生状况。方法按照GB14934-94《食(饮)具消毒卫生标准》要求,2009-2011年对辖区内餐饮单位的餐具用大肠菌群纸片法进行采样检测,并对各类餐饮单位的消毒方式和保洁设施进行调查。结果 3年餐具消毒平均合格率仅为58.7%,不同规模餐饮单位的餐具合格率依次为:大型>中型>小型;不同消毒方式消毒效果比较:煮沸消毒>消毒柜消毒>药物消毒,消毒后有保洁设施的餐具合格率明显高于无保洁设施的。结论原平市餐具消毒卫生状况有待改善,卫生监督部门要加强监管,确保消费者就餐卫生安全。
Objective To understand the original Pingdingshan food industry tableware health status.
