开封糖醋熘鲤鱼焙面 糖醋熘鲤鱼焙面是“糖醋熘鲤鱼”和“焙面”两种菜肴的合称,简称“鲤鱼焙面”。这是开封“又一新”饭庄的拿手名菜。相传这道菜原是宋朝皇宫御膳的绝招,仅用于举办大型喜庆宴席或招待外国使节。据《清稗类钞》载:“黄河之鲤甚佳,以开封为最……其鲜肥嫩 Kaifeng sweet and sour carp 焙 carp 糖 sweet and sour carp 焙 Carp noodles is a “sweet and sour 熘 carp” and “baking noodles” two dishes collectively referred to as “Carp noodles.” This is Kaifeng “new” restaurant’s best dish.
