目的对天津某武警部队每日膳食摄入量进行调查,并通过两种方法对食物的营养成分进行分析比较,了解实际膳食营养素摄入状况。方法膳食调查采用称重法并参照《中国食物成分表2002》计算各食物营养素摄入量;营养成分分析采用双份饭法收集食物样品,应用化学分析法测定食物中各种营养素含量。结果分析测定的膳食中主要营养素(蛋白质、脂肪及碳水化合物)、矿物质(Na、K、Mg、Ca、Zn、Cu及Se)和维生素(β-胡萝卜素、维生素E、硫胺素、核黄素、维生素C、烟酸、维生素B6及维生素A)的摄入量与膳食调查计算值相比较均偏低。结论两种方法的差异性最终表现为食物的实际测定值小于膳食调查计算值,有必要改善食物的储运加工方式,以达到合理营养,提高官兵健康水平。
Objective To investigate the daily dietary intake of an armed police force in Tianjin and to analyze and compare the nutritional components of the food by two methods to understand the actual dietary nutrient intake. Methods The food intake was calculated by weighing method and referring to “China Food Ingredient Table 2002”. Nutritional analysis The food samples were collected by double serving method, and the content of various nutrients in food was determined by chemical analysis. Results Analysis of dietary determinations of major nutrients (proteins, fats and carbohydrates), minerals (Na, K, Mg, Ca, Zn, Cu and Se) and vitamins (beta-carotene, vitamin E, thiamine, Flavonoids, vitamin C, niacin, vitamin B6 and vitamin A intake were all lower than those calculated from the dietary survey. Conclusion The difference between the two methods is that the actual measured value of the food is less than the calculated value of the dietary survey. Therefore, it is necessary to improve the storage and transportation of food in order to achieve reasonable nutrition and improve the health of officers and men.
