前言 萝卜,是深受人们喜爱的蔬菜之一。其营养丰富,并有一定的药用价值;它的保健功能,越来越被人们重视和科学利用。 萝卜,原产于我国并在晚清时期普遍种值,适于全国各地栽培。因此它是我国土生土长、分布广、品种多的一种蔬菜,又是北方人们主要的冬菜之一。但人们缺乏对萝卜的充分利用和对其营养、药用、保健功用的了解和认识。萝卜营养物质丰富,含有多种维生素和矿物质,还有抑制体内癌细胞生长的酶;此外,萝卜中还含有氢化粘液素、葫芦巴碱、芥子油等多种特殊成分,这些不但是人体所必需的营养物质,更重要的还能调节人体的营养平衡。
