从风险评估的4个方面并结合欧盟法规(Regulation(EC) No 2073/2005)中单核细胞增生李斯特菌的限量指标,介绍关于即食食品中单核细胞增生李斯特菌风险评估的新观点,并指出需要改进微生物标准中的单核细胞增生李斯特菌的限量指标。假设此菌对人类疾病的有关风险,对如何降低即食食品中单核细胞李斯特菌的水平提出建议。
A new perspective on the risk assessment of Listeria monocytogenes in ready-to-eat foods is presented from four aspects of the risk assessment in combination with the limited number of Listeria monocytogenes in the EU Regulation (EC) No 2073/2005 And pointed out the need to improve the limits of microbial count Listeria monocytogenes. Assuming that this bacterium is at risk for human disease, recommendations are made on how to reduce the level of Listeria monocytogenes in ready-to-eat foods.
