目的:评价实验室合成的溴酚类化合物3-溴-4,5-二羟基苯甲醛的抗氧化活性。方法:分别用清除1,1-二苯基-2-三硝基苯肼(DPPH)自由基、羟基自由基和超氧阴离子自由基法测定。结果:3-溴-4,5-二羟基苯甲醛对DPPH自由基的清除能力要明显强于维生素C(Vit C)和特丁基对苯二酚(TBHQ),半清除率(IC50)=4.49 mg·L-1;对超氧阴离子自由基的清除能力也强于TBHQ,IC50=0.93 g·L-1;而对羟基自由基的清除能力则稍弱于VC和TBHQ,IC50=122.42 mg·L-1。结论:3-溴-4,5-二羟基苯甲醛具有较强的抗氧化活性,可以作为食品工业中一种有潜力的天然抗氧化剂成分。
OBJECTIVE: To evaluate the anti-oxidative activity of 3-bromo-4,5-dihydroxybenzaldehyde, a bromophenol compound synthesized in laboratory. Methods: The free radicals of 1,1-diphenyl-2-trinitrophenylhydrazine (DPPH), hydroxyl radicals and superoxide anion radical scavenging were determined respectively. Results: The ability of 3-bromo-4,5-dihydroxybenzaldehyde to scavenge DPPH was significantly higher than that of Vit C and TBHQ. The half-clearance rate (IC50) 4.49 mg · L-1. The scavenging capacity of superoxide anion radical was also stronger than that of TBHQ and IC50 = 0.93 g · L-1, while the scavenging capacity of hydroxyl radical was weaker than that of VC and TBHQ, IC50 = 122.42 mg · L-1. Conclusion: 3-Bromo-4,5-dihydroxybenzaldehyde has strong antioxidant activity and can be used as a potential natural antioxidant in the food industry.
