俄罗斯科技人员最近利用葡萄汁加工或酿造葡萄酒后的葡萄渣,提取膳食纤维获得成功。该产品含多聚糖、木质素及含氮物质等成分,性能接近于小麦麦麸食用纤维,可广泛应用于饮料与糕点生产。葡萄渣经96℃热水浸泡2h,加酸或碱分离,得到的产物中和至 pH 值为中性,再用清水冲洗干净,即得到所需的膳食纤维。用这种方法提取的膳食纤维,得率可达75%左右。
Russian technologists have recently succeeded in extracting dietary fiber by processing or brewing wine grapes with grape juice. The product contains polysaccharides, lignin and nitrogenous substances and other ingredients, performance close to the wheat bran dietary fiber, can be widely used in beverage and pastry production.
