分析不同温度干燥处理对补血草根中总酚质量分数及其抗氧化能力的影响.总酚质量分数的测定采用Folin-酚比色法,抗氧化能力的检测分别采用DPPH法、TEAC法和FRAP法.结果表明,经50~80℃温度范围内干燥处理后,补血草根总酚质量分数、清除DPPH.能力和抗氧化能力均随之逐渐提高,当θ=70℃或80℃处理时达最大(ω(总酚)=7.34%、ρSC50=0.68 mg·mL-1、cTEAC=0.92 mmol·g-1和cFRAP=0.25 mmol·g-1),而当θ≥90℃时,则显著下降;此外,θ=70℃处理后的补血草根,其总酚及其抗氧化能力与晒干处理的样品差异均不显著(P>0.05),但与冻干处理的差异则不完全一致.统计分析显示,经不同温度干燥处理后,补血草根中总酚的质量分数与其抗氧化能力间有极显著相关性(R2>0.91).可见,不同温度干燥处理对补血草根总酚质量分数及其抗氧化能力的影响显著,提示新鲜的补血草根经适当的干燥处理可提高其总酚质量分数和抗氧化活性.
