The open and packaged circumstance at 4℃ were applied to storing fresh bamboo shoots after harvested to determine the effect of modified atmosphere packaging on the main qualities of the bamboo shoots.Bamboo shoots were stored under two different conditions until they were suitable for consumption: refrigeration at 4℃ with open LDPE; MAP with 0.06mm packaging film polyethylene with the gas component of 5%CO2, 2%O2 and 93%N2 at 4℃.
