为提高屠宰卫生管理水平,保障肉品卫生质量,对我市鸡、鸭、兔屠宰场的肉食产品、屠宰工艺和工具等1333件样品作了带菌情况调查.简报如下。样品采自(常规采样法)我市8个屠宰场的鸡、鸭、兔肉(包括内脏)、屠宰工具以及活禽、兔的粪便计1333件。结果:在1333件样品中,共检出沙门氏菌68株,详见附表。其中842件鸡样品沙门氏菌检出率为2.38%;361件鸭样品检出率为
In order to improve the hygiene management of slaughtering and ensure the hygiene quality of meat products, 1333 samples of carnivorous products, slaughtering process and tools of chickens, ducks and rabbits in our city were surveyed. Samples were collected from 1333 pieces of chicken feces, ducks and rabbits (including offal), slaughtering tools and live poultry and rabbits in 8 slaughterhouses (conventional sampling method) in our city. Results: Among the 1333 samples, 68 Salmonella strains were detected, as shown in the attached table.
