杏原产我国,在东北、华北、西北各地均有栽培,为我国北方地区主要水果之一。杏树适应性广,抗逆性强;果实用途多,除作水果供鲜食外,也可加工杏干、杏脯、杏酱和糖水罐头;杏仁可榨油和作为糕点原料。杏树品种繁多,除有辽杏、西伯利亚杏和藏杏几个野生种外,还有一般栽培品种,即普通杏。全国约有杏的品种1500个以上,我省约有129个,其中品质较好的有兰州大接杏,兰州大偏头,兰州金妈妈,兰州猪皮水杏,天水张公园杏,宁县曹杏,敦煌李光杏,陕西华县
