厦门市个体自榨花生油和小吃店食用植物油卫生质量调查分析

目的了解和掌握厦门市个体榨油作坊现榨花生油和餐饮小吃店食用植物油的安全水平和污染程度。方法对35家个体榨油作坊和60家餐饮小吃店卫生情况进行现场调查并随机抽样检测植物油。按照GB/T 5009检测酸价、过氧化值、黄曲霉毒素B1、总砷、铅和苯并(α)芘等项目。依据GB 2716-2005进行评价。结果共检测食用油150份,总合格率为76.67%。个体榨油作坊花生油的合格率为66.00%,不合格原因主要是黄曲霉毒素B1、铅和苯并(α)芘超过了GB 2716-2005规定的限量值;餐饮小吃店烹调用食用油的合格率为82.00%,不合格产品主要集中在散装无标识食用油中,酸价和过氧化值的合格率相对较低。结论相关部门应加强对现榨花生油和餐饮小吃店烹调用食用油的监测和监督管理,严禁使用无产品标识和质量保证的散装油,加大处罚力度,确保市民身体健康和食品安全。 Objective To understand and grasp the safety level and degree of contamination of edible vegetable oil from peanut oil and snack bar in Xiamen City, the individual squeeze oil workshop. Conclusion The relevant departments should step up the monitoring and supervision of the cooking edible oils currently used in peanut oil and snack bars, prohibit the use of bulk oil without product identification and quality assurance, and increase penalties to ensure their health and food safety.
