目的研究危害分析关键控制点(HACCP)系统在企业食堂卫生管理中的应用效果,以提高食品卫生安全质量。方法运用HACCP系统的基本原理和方法,对企业食堂卫生管理进行危害分析及关键控制。结果实施HACCP管理系统后较“实施前”在卫生管理、卫生基础设施投入、食品加工制作等方面均有明显改善。结论HACCP系统对于提高企业食堂卫生管理水平、预防集体食物中毒及食源性疾患发生有较好作用。
Objective To study the application effect of HACCP system in the health management of canteens to improve the quality of food hygiene and safety. Methods The basic principles and methods of HACCP system were used to conduct hazard analysis and key control on the health management of canteens. Results After the HACCP management system was implemented, the implementation of HACCP management system had significantly improved in terms of health management, health infrastructure investment and food processing and production. Conclusion The HACCP system has a good effect on improving the health management of canteens and preventing the occurrence of food poisoning and food-borne diseases.
