目的了解近年来秦皇岛市水产品污染现状,确定其微生物及其致病因子的可能来源,及时发现水产品安全隐患,进行风险预警。方法依据中华人民共和国国家标准GB/T 4789、《河北省食品微生物及其致病因子监测技术指南》和河北省地方标准DBS 13/001—2015《食品中诺如病毒检测》,采集410份水产品,进行检测。结果 2014年、2015年微生物及其致病因子阳性率分别为16.3%、19.6%,总体阳性率为18.3%。即食水产品阳性率为10.6%;鲜活水产品阳性率为22.8%,其中鱼类阳性率为11.2%;虾蟹类阳性率为5.2%;贝类阳性率为6.4%。结论秦皇岛市水产品污染率有升高的趋势,提示加强餐饮环节的监管,指导食用方法,防止食源性疾病的暴发。
Objective To understand the status quo of aquatic products contamination in Qinhuangdao in recent years, determine the possible sources of their microorganisms and their causative agents, and find out the potential safety hazards of aquatic products in time to carry out risk early warning. Methods According to the national standard GB / T 4789 of the People’s Republic of China, “Guideline for Monitoring Food Microorganism and Its Pathogenic Factors in Hebei Province” and Hebei Province Local Standard DBS 13 / 001-2015 “Norovirus Detection in Foods”, 410 samples of water Products, for testing. Results The positive rates of microorganisms and their causative agents in 2014 and 2015 were 16.3% and 19.6%, respectively, and the overall positive rate was 18.3%. The positive rate of fresh aquatic products was 10.6%; the positive rate of fresh aquatic products was 22.8%, of which the positive rate of fish was 11.2%; the positive rate of shrimp and crab was 5.2%; the positive rate of shellfish was 6.4%. Conclusion The pollution rate of aquatic products in Qinhuangdao City has been on the rise. It suggests that we should strengthen the supervision of the catering sector and guide the edible methods to prevent the outbreak of foodborne diseases.
