目的了解2013年-2015年浙江4个沿海地市典型海产品中河豚毒素的含量情况。方法按照代表性、适时性和随机性原则,在网店、食品商店和农贸市场采集新鲜贝类、织纹螺和烤鱼片样本,采用亲水液相色谱-串联三重四极杆质谱法进行河豚毒素定量检测。结果浙江沿海地市3大类典型海产品中,织纹螺样品河豚毒素检出率最高(93.3%,14/15),浓度最高达15.75 mg/kg;烤鱼片样品河豚毒素检出率为6.2%(10/161),最高浓度为1.79 mg/kg,网店销售和散装烤鱼片的检出率相对较高;新鲜贝类样品均未检出河豚毒素(0/115)。结论浙江沿海地市织纹螺普遍存在河豚毒素,建议继续禁止销售和食用织纹螺;部分烤鱼片样本检出河豚毒素,相关部门应加强监管,以保证当地居民的身体健康。
Objective To understand the content of tetrodotoxin in the typical seafood of four coastal cities of Zhejiang Province from 2013 to 2015. Methods According to the principles of representativeness, timeliness and randomness, samples of fresh shellfish, lobster and grilled fillets were collected from online shops, food stores and farmers’ markets. The samples were analyzed by liquid chromatography-tandem triple-quadrupole mass spectrometry Tetrodotoxin quantitative detection. Results Among the three typical marine products in Zhejiang coastal areas, the detection rate of tetrodotoxin was the highest (93.3%, 14/15) and the highest was 15.75 mg / kg for tepals, and the detection rate of tetrodotoxin 6.2% (10/161), the highest concentration was 1.79 mg / kg. The detection rates of online sales and bulk grilled fillets were relatively high. No tetrodotoxin was detected in fresh shellfish samples (0/115). CONCLUSION Tetrodotoxin was found in the endemic areas of Zhejiang Province. It is suggested that sales and consumption of snails be further prohibited. Some samples of teflon fillets should be detected and teratotoxins should be detected. Related departments should strengthen supervision to ensure the health of local residents.
