大豆起源于我国,具有五千多年的历史。在栽培和食用过程中,我国拥有无数的品种类型、丰富多彩的食用方法。今天,随着人民生活水平的提高,有必要将二者结合起来,选育加工品质优良的大豆新品种。本研究的目的就是分析我国南方地区目前主要推广品种的豆腐加工成品率,分析育成新品系群体中该性状的变异,为选育加工品质优良的大豆新品种提供理论依据。
Soy originated in China, with more than five thousand years of history. In the process of cultivation and consumption, our country has numerous varieties of types, rich and varied edible methods. Today, with the improvement of people’s living standard, it is necessary to combine the two together to breed and process new varieties of soybean with good quality. The purpose of this study is to analyze the yield of tofu processed in the main popularized varieties in southern China and to analyze the variation of this trait in the new breed of breeding new breed to provide a theoretical basis for the selection and processing of new varieties with good quality.
