脱水蔬菜具有便于贮存、运输和携带的优点,食用起来也很方便;如果制作方法完善还可以保存较多的营养素。因此它是一种很好的副食品,对解决部队在战时和蔬菜淡季的供应问题上,有很重要的意义。随着大生产运动的高涨,我军以生产自给、支援社会主义建设、改善部队生活为目的的大搞副业生产工作,已取得了很大的成绩。但旺季蔬菜吃不了造成浪费,淡季吃不上蔬菜,可引起营养缺乏病。所以,充分而合理的利用旺季生产的蔬菜,将其多余部分加以妥善的贮存,以备不时之需,实在重要,而制作脱水蔬菜则为解决这一问题的方法之一。
Dehydrated vegetables have the advantage of being easy to store, transport and carry, and are also very convenient to eat; more nutrients can be preserved if the manufacturing process is complete. Therefore, it is a good non-staple food and has great significance in solving the troop supply in wartime and vegetable off-season. With the upsurge of large-scale production campaigns, our army has made great achievements in promoting sideline production with the goal of providing for self-sufficiency, supporting socialism and improving the life of the troops. But the season vegetables can not afford to waste, off-season can not eat vegetables, can cause nutritional deficiencies. Therefore, full and reasonable use of vegetables produced in high season, the excess part of the proper storage, to prepare for contingencies, it is important, and the production of dehydrated vegetables is one of the ways to solve this problem.
