餐饮服务与管理是中职餐饮专业一门实践性很强的学科。它主要是为了培养学生的实际应用能力和技术水平。所以,在课堂教学中进行职业能力的培养就显得十分重要。情景模拟教学法是指以理论为基础,结合培养目标,教材要求以及学生的实际情况,进行有目的、有组织的引导和调控,在教学过程中设计接近餐饮服务与管理实际的场景,指导学生在语言、动作、情境等方面进行模拟,以发挥学生学习的主动性、能动性与创造性作用,帮助学生在情景模拟活动中加深对知识的理解,提高现场实际处理问题的能力。
