相关实验证明,紫甘薯花青素预防性摄入可明显延长小鼠的醉酒时间。饮酒前服用花青素,可以降低肝脏重量和肝脏指数,有效降低急性酒精性肝损伤。花青素可以降低血清转氨酶ALT,对急性酒精性肝损伤具有一定的保护作用。酒精在肝脏中代谢会产生大量的自由基,造成肝细胞的损伤。SOD是体内重要的抗氧化酶,是体内自由基的清除剂。花青素能提高肝脏内SOD酶活性,随着服用剂量的提高,酶活性也提高。
