目的了解无锡市锡山区学校食堂餐具的消毒现状。方法采用大肠菌群快速检测纸片法,依据GB 14934-1994《食(饮)具消毒卫生标准》,对2012-2014年锡山区部分学校食堂已清洗消毒的餐具进行随机抽样监测。结果 3年共采集餐具1 263份,总合格率为65.00%,2012-2014年合格率分别为75.00%、63.50%和58.11%;托幼机构、小学、中学和职业技术学校的合格率分别为67.92%、64.06%、61.52%和70.53%;不同餐具类型中,碗、餐盆、饭(汤)勺和筷子的合格率分别为66.33%、63.55%、63.94%和67.72%;量化分级A级与非A级食堂餐具合格率分别为80.65%和56.01%。结论无锡市锡山区学校食堂餐具消毒合格率偏低,且呈逐年下降趋势,相关部门应加强学校餐具消毒监管力度,改进管理措施,提高消毒质量。
Objective To understand the disinfection of school canteen tableware in Xishan District of Wuxi City. Methods According to GB 14934-1994 Hygienic standard for food (drink) disinfection, the paper method was adopted to detect the stains of coliform quickly. The samples of cleaned and disinfected tableware in some school canteens of Xishan District from 2012 to 2014 were randomly sampled and monitored. Results A total of 1 263 dishes were collected during the three years, with a total pass rate of 65.00%. The pass rates were 75.00%, 63.50% and 58.11% respectively from 2012 to 2014. The pass rates of kindergartens, primary schools, secondary schools and vocational technical schools were 67.92%, 64.06%, 61.52% and 70.53% respectively. The pass rates of bowls, meal bowls, rice soup and chopsticks were 66.33%, 63.55%, 63.94% and 67.72% And non-A-level canteen cutlery pass rates were 80.65% and 56.01%. Conclusion The qualified rate of tableware disinfection of school canteens in Xishan District of Wuxi City is low, and showed a declining trend year by year. Relevant departments should strengthen the supervision of school tableware disinfection, improve management measures and improve the quality of disinfection.
