本文从社会资本与厨师职业竞争力的关系的角度,来剖析厨师抱团的动因。指出了社会资本对厨师求职、技术提高以及职务晋升等方面的影响,并在此过程中阐述了餐饮行业中的“拜师”“包厨”等现象。对于认识和了解厨师这一特殊团体具有重要意义,也是餐饮管理中厨政管理的重要参考依据。
This paper analyzes the motivation of chef Baotuan from the perspective of the relationship between social capital and chef occupational competitiveness. The paper points out the influence of social capital on chef job hunting, technology improvement and job promotion. In the process, the phenomenon of “apprentice ” “package chef ” in the catering industry is expounded. For understanding and understanding of this special group of chefs is of great significance, but also an important reference for cooking management in the kitchen management.
