餐厨垃圾是指居民日常生活以外的食品加工、饮食服务、单位供餐等活动中产生的剩菜剩饭等垃圾和废弃食用油脂,俗称泔脚、泔水或潲水;以淀粉类、食物纤维类、动物脂肪类等有机物质为主要成分,具有水分、油脂、盐分含量高、易腐烂、易发酵、易发臭等特点。近年来随着人民生活水平的不断提高,油脂含量也随之增高,油脂高虽能提高餐饮垃圾的产气潜力,但在厌氧消化过程中也可造成抑制效应。油脂浓度过高,产甲烷菌容易受到油脂及长链脂肪酸抑制,从而抑制餐厨垃圾的水解,影响产气效果。本文采用热水冲洗的方法能有效减低
