白菜是北京郊區栽培面積最大,產量最高而且極耐貯藏的蔬菜。它的栽培面積幾佔全部秋菜種植面積的60%以上,是供應首都人民冬季和早春食用的最主要的蔬菜。這些蔬菜必須是自10月至翌年3、4月間有計劃地陸續而均衡地上市,才能保持正常的供應。這是大都市蔬菜供應的一大問題,搞不好就會造成初冬積壓損耗,而翌春供應緊張的局面,這是封計劃供應對維持物價穩定都是不利的,封菜農和全市人民也是十分不利的。因此依靠貯藏並做好貯藏的工作,是保證冬春蔬菜正常供應,保障菜農合
