测定了不同相对湿度下适于黑胡椒真菌生长的含水量。黑胡椒含水量为18%时,就会生长真菌,但在次低的14.9%含水量时,没有发现真菌生长。显微检测表明,浸染新鲜胡椒的真菌有单端孢(Trichothecium)、刺盘孢(Colletetrichum)和镰孢霉(Fusarium),侵染黑胡椒的有曲霉(Aspergilli)和青霉(Penicillium)。
The water content suitable for the growth of black pepper fungi under different relative humidity was determined. The fungus grew when black pepper had a moisture content of 18%, but no fungal growth was found at the next 14.9% moisture content. Microscopic examination revealed that the fungi infected with fresh pepper are Trichothecium, Colletetrichum and Fusarium, Aspergilli and Penicillium which infect black pepper.
