1 概要随着家用电冰箱的普及,百货公司和超级商场食品部都在销售可以存放的冷冻食品。街上的小商店和点心店,在冷冻柜里也放在肉类、鱼类、牛奶、清凉饮料、雪糕等食品样品。于是,随着在常温以下保存、出售冷冻食品、饮料的增加,使运送这些食品、饮料的冷藏汽车、保温汽车日益增多。这样,保持低温的食品与保温车、冷藏车有了密切的关系,低温运输、低温保存和低温销售构成了低温流通系统,一般把它称为“冷链”。这些冷冻食品或新鲜副食品,由于在一定的低温下品质保持不变,可以贮藏、运输,防止了食品在上市季节和青黄不接时价格暴落猛涨,有利于提高产量,不断发展生产。
