在我们伟大祖国的悠久历史和灿烂的文化中,我国古代人们对酿酒发酵化学有过重要贡献。下面分三个方面介绍。一、发明曲蘖酿酒制曲酿酒技术酿酒发酵技术总可以归为三宗,其一渊源于古埃及的麦芽啤酒生产,其二为古地中海欧洲葡萄酒酿造,其三就是我国古代发明的从曲蘖酿酒发展而成的制曲酿酒。
