近年来,快速发展的餐饮市场为餐饮行业创造了新的发展、创新机会,物美价廉、能满足绝大多数消费者饮食需求的餐饮正成为餐饮行业的投资热点和主要利润来源。带有体验主题性特色的餐饮经营实体的相关研究成为了目前休闲领域的热点。体验成为当下主题性餐饮空间的主话题。主题性餐饮相对于市场上的全服务餐饮形式,它的空间功能带有明显的区域定义,服务具备一定质量水准,是一种具有特色的体验型餐饮。其中,特色的服务是该类餐饮的最大特色。笔者认为,体验主题性餐饮空间除了综合了一般餐饮的特质,更多的是具备个性化,服务特色的新型体验餐饮。这样的餐饮空间既具备一般餐饮硬件标准及服务理念,更多的是融入量身打造的个性化需求。空间环境氛围的营造是体验主题性餐饮需特别注意的重点之一。通过对整个空间的装饰设计人性化、特色化手法,通过设计师运用构成等装饰手法,对空间进行整合,使之遵循以人为本的自然原则。体验主题性餐饮具备如下特质:第一,体量一般不大,面积300-500㎡;第二,各个餐饮区具备明显的主题特色;第三,服务员数量不多,提倡客人自助服务,提倡个人经历体验;第四,餐饮内部的配套功能根据餐饮自身定位的客户群来定义;第五,餐饮服务采用市场通用的一般标准的同时,更多的是个性特色的引导消费;第六,餐饮内部陈设及特色是精神体验主题性餐饮新的消费模式。
