产气荚膜梭菌(Clostridium perfringens)是一种革兰阳性厌氧菌,能够引起食物中毒和坏死性肠炎等疾病,该菌是临床上气性坏疽病原菌中最常见的一种梭菌,在体内能形成荚膜,能分解肌肉和结缔组织中的糖,产生大量气体,从而导致组织严重气肿,继而影响血液供应,造成组织大面积坏死,美国疾病预防控制中心数据显示,产气荚膜梭菌已成为继弯曲菌和沙门菌之后的又一大引起细菌性食物中毒的致病菌~([1-4])。
