目的了解铁路列车食(饮)具卫生状况,为进一步规范铁路列车食(饮)具卫生管理提供科学依据,保障广大旅客的饮食卫生安全。方法对北京铁路局铁路列车食(饮)具进行监测,按照GB14934-94的要求,采用大肠菌群纸片法检测列车餐车各类公共食(饮)具。结果 2009年-2012年检测铁路列车食(饮)具2565份,合格率为86.6%。2011年合格率最低(P<0.001)。一、四季度检测合格率高于二、三季度(P<0.001)。各车型之间特快列车的合格率最低为82.9%(P<0.01)。各餐具类型之间,熟刀和熟板合格率分别为70.3%和64.8%,检测合格率低于其他(P<0.001)。结论铁路列车食(饮)具卫生状况较好,但仍存在问题,需进一步加强监督监测管理工作,对食(饮)具卫生不合格列车要加大监督频率。
Objective To understand the hygienic conditions of food (drink) in railway trains and to provide scientific basis for further regulating the hygienic management of food (drink) in railway trains and to ensure the health and safety of passengers. Methods The food (drink) of railway train in Beijing Railway Administration was monitored. According to the requirements of GB14934-94, all kinds of public food (drink) trains were checked by coliform paper method. Results From 2009 to 2012, 2565 samples of food (drink) from railway trains were tested with a pass rate of 86.6%. The lowest pass rate in 2011 (P <0.001). The first and fourth quarters of the test pass rate higher than the second and third quarters (P <0.001). The passing rate of express train among the models was the lowest (82.9%) (P <0.01). Between the types of tableware, cooked knife and cooked board pass rates were 70.3% and 64.8%, the test pass rate was lower than the other (P <0.001). Conclusions The food hygiene condition of railway train is good, but there are still some problems. It is necessary to further strengthen the supervision, supervision and management work and increase the frequency of supervision on unqualified food and drink.
