随着人们对橄榄油的质量安全和营养价值的重视,对其检测技术的要求也越来越高。核磁共振技术是近年来蓬勃发展起来的一种快速检测手段,具有快速、高效、无污染、无需繁琐的前处理、重现性高等优点,在许多领域得到广泛应用。本文介绍了国内外运用核磁共振技术(1H,13C,31P)对橄榄油进行品质评价(包括储存历史、氧化稳定性、风味营养品质等)及其掺伪检测的研究现状,并且分析了该技术应用于橄榄油品质检测时尚存在的问题和今后的研究方向。
As people attach importance to the quality, safety and nutritional value of olive oil, the requirements of their detection technology are also getting higher and higher. Nuclear magnetic resonance (NMR) is a rapid detection method that has flourished in recent years. It has the advantages of fast, high efficiency, no pollution, no complicated pretreatment and high reproducibility. It has been widely used in many fields. This paper introduces the research status of the quality evaluation of olive oil (including storage history, oxidation stability, flavor and nutritional quality, etc.) and its adulteration detection by using nuclear magnetic resonance (1H, 13C, 31P) both at home and abroad, Applied to olive oil quality testing problems and future research direction.
