泡菜是巫山菜的灵魂,就如同郫县豆瓣之于川菜。但豆瓣只是调味品,而泡菜既是调味品,又是下饭菜。巫山人的餐桌上可以没有肉,但绝不能没有泡菜。在巫山,家家都有泡菜坛,人人都会泡泡菜。巫山江东出土的东汉时期泡菜坛,佐证着巫山人做泡菜至少有千年历史。时至今日,无论是泡菜坛,还是泡菜技术,都几无变化,我们从未超越,甚至也无法超越,令人不得不惊叹古巫山人的神奇手艺。
Pickles are the soul of Wushan dishes, just like Pixian bean cake in Sichuan. But watercress is only condiment, and kimchi is both condiment, but also the next meal. Wushan people can have no meat on the table, but must not have kimchi. In Wushan, every family has kimchi, everyone will pickle. Wugang unearthed during the Eastern Han Dynasty kimchi altar, evidence of Wushan kimchi made at least a thousand years of history. Today, whether it is kimchi, kimchi or technology, are few changes, we have never exceeded, or even beyond, people have to marvel at the ancient Wushan magic.
