The period of the Republic of China was a stage in which Hangzhou’s food was inherited. It was not only the continuation of the glorious ancient Hangzhou food culture, but also laid a foundation for the rapid development of food culture in the People’s Republic of China, especially in the thirty years after the reform and opening up.
