WHO reported in 2001 that more than 2 billion people worldwide suffer from iron-deficiency anemia and that iron deficiency is particularly severe in developing countries. The 2002 survey of nutrition and health status of Chinese residents showed that the prevalence of anemia among Chinese residents was 15.2% on average, of which the prevalence of anemia among infants under 2 years old, over 60 years old and women of childbearing age were 24.2% and 21.5%, respectively 20.6%. As early as 2001, two studies reported by Chinese scholars showed that iron-fortified soy sauce has the effect of improving human iron nutrition. An intervention study of 300 anemic students demonstrated that these people add 5 milliliters of iron-fortified soy sauce every day for three months
