目的了解烟台市居民主要膳食中镉含量及镉暴露风险。方法在烟台市随机采集10类925份食物样品并测定镉含量,结合居民膳食消费量数据,采用点评估方法计算每标准人月均镉暴露量和安全限值(MOS)并进行风险评估。结果 925份样品中仅1份扇贝样品镉含量超标。10类食物中镉含量均值为26.47μg/kg,其中鱼虾类最高为92.48μg/kg,其次为动物内脏、面类和蔬菜,镉含量均值分别为47.35、33.25和18.87μg/kg。米类、面类、禽畜肉和动物内脏的镉检出率为100.00%。居民每月主要食物镉暴露量总和(P95)为1 399.48μg,未超过每月允许摄入量,MOS值为1.07。市民膳食月镉暴露比例最高为面类食物76.09%,最低为蛋类食物0.04%。结论烟台市居民主要膳食镉暴露处于安全水平;面类食品是镉暴露危险食品,应加强对其镉污染控制,降低膳食风险。
Objective To understand the cadmium content and cadmium exposure risk of residents in Yantai City. Methods A total of 925 food samples of 10 classes were collected and the cadmium content was determined in Yantai. The average monthly cadmium exposure and safety limit (MOS) of each standard were calculated by point assessment and risk assessment was carried out based on the data of residents’ dietary consumption. Results Only 1 scallop sample of 925 samples had excessive cadmium content. The average content of cadmium in the 10 kinds of food was 26.47μg / kg, of which the highest was 92.48μg / kg for fish and shrimp, followed by the animal offal, noodles and vegetables. The average contents of cadmium were 47.35,33.25 and 18.87μg / kg respectively. The detection rate of cadmium in rice, noodles, livestock meat and animal offal was 100.00%. The monthly total food intake of cadmium (P95) for residents was 1 399.48 μg, which did not exceed the monthly allowable intake and the MOS value was 1.07. The monthly public dietary exposure to cadmium highest proportion of noodles 76.09%, the lowest for food 0.04% eggs. Conclusion The main dietary cadmium exposure of residents in Yantai City is at a safe level. The noodles are dangerous foodstuffs exposed to cadmium exposure. Cadmium pollution control should be strengthened to reduce the dietary risk.
