以往认为,动物脂肪不宜多吃,但从对丹麦人和爱斯基摩人的疾病调查中发现,他们虽然摄取的动物脂肪大大高于普通人群,但脑血管病发病率却不到其他地区的10%。同时一项长期的试验发现,动物油和植物油对人与动物体内胆固醇的影响没有多大区别。1994年,日本的一项调查表明,长期吃动物油的人比少吃油或多吃植物油的人平均寿命还长。其原因是脂肪中不饱和脂肪键的位置之故。
