锦香梨是1965年由中国农科院兴城果树所用巴梨与秋子梨(南果梨)杂交育成。锦香梨属于西洋梨软肉型品种,果实纺缍形,中等大小,平均果重130克左右,果皮黄绿色,经后熟为全面黄白色或橙黄色,阳面有红晕。果肉柔软多汁,近果心处有少许石细胞,经测定果实可溶性固形物为13%~l4%(以折光计表示),总酸0.64%(以柠檬酸表示),维生素C为4.4毫克/100克。锦香梨不仅抗寒性强,而且抗腐烂病、黑星病,在锦州、兴城以及营口等地区栽培,尚未发现冻害。由于锦香梨树体半矮化,适于密植,在我国北部寒冷地区的西洋梨栽培中,具有极大的潜力与发展前途。锦香梨果实9月中下旬成熟,除生食外,特别适于加工罐头、果汁等产品,目前市场上该种产品仍为空白。现将锦香梨的几种加工工艺与操作要点介绍如下。

Due to the semi-dwarfism of Jinxiang pear tree, it is suitable for close planting and has great potential and development prospects in the cultivation of pear in cold regions of northern China.
