目的探讨农村家庭聚餐预防食物中毒的有效途径。方法对一起农村聚餐食物中毒调查,分析农村家宴的食品安全隐患。结果农村家宴制作存在从业人员缺乏管理、食品采购把关不严、加工过程交叉污染、餐具容器不消毒等食品安全风险。结论农村家宴食品安全监管指导存在盲区,需要从完善制度、加强关键点控制、严肃责任追究等方面强化管理。
Objective To explore effective ways to prevent food poisoning by rural family dinner. Methods A survey of food poisoning in rural areas was conducted to analyze the food safety problems in rural feast. The results of rural banquet production there is a lack of management practitioners, procurement of food unscrupulous, cross-contamination of the process, non-sterilized tableware containers and other food safety risks. Conclusion There is a blind spot in the supervision of food security at home banquets. There is a need to strengthen management in terms of perfecting the system, strengthening the control of key points and investigating serious responsibilities.
