我国现阶段茶叶加工技术总体上还处在半手工、半机械化的低水平,在消化吸收国内外茶叶及食品加工技术的基础上,结合我国茶产业的实际,开展茶叶清洁化、机械化、连续化、自动化和标准化加工技术、工艺和装备研究以及技术集成是提高我国茶叶加工技术水平行之有效的途径。本文介绍了茶叶现代化加工技术与装备的研究与推广实践,包括:新型茶叶加工设备的研制、茶叶加工新技术和新工艺的开发、炒青绿茶清洁化生产线的研建、4种典型外形(条形、松散形、紧结形、扁形)名优绿茶清洁化生产线的开发、清洁化加工技术规程的制订与实施,推广应用后,取得了显著的经济和社会效益。
