2000多年前,伴随着水稻种植技术从大陆传入日本,日本的饮食生活也由此开始以米为中心。与应季蔬菜以及鱼类产品一起食用的米饭传统在江户时代达到了极其考究的状态,如今作为日本料理的基础而存留下来。但是,150年前日本掀起了向西方学习的高潮,除了日本传统的料理之外,大量符合日本人饮食喜好的西洋料理被引入,从此日本人开始了营养丰富的饮食生活。本文主要是对于现代日本人的饮食习惯的变化以及饮食习惯发生变化的原因进行分析,从而论述日本的饮食生活的将来。
More than 2000 years ago, along with rice planting technology from Japan to mainland China, Japan’s dietary life began to be centered on rice. The tradition of rice, which is served with seasonal vegetables and fish products, has been extremely well-established in the Edo period and now remains as the basis of Japanese cuisine. However, 150 years ago Japan set off a wave of learning from the West. Apart from traditional Japanese cuisine, a large number of western dishes were introduced to meet the Japanese dietary preferences. From then on, the Japanese started a nutritious diet. This article mainly analyzes the changes of modern Japanese dietary habits and the reasons for changes in eating habits, so as to discuss the future of Japan’s dietary life.
