四川卫视一个讨论川菜的节目中(2002年8月12日),主持人向魏明伦先生请教何为“宫保鸡丁”,魏说:“宫保是四川总督丁宝桢的官称。宫保是总督的别称。”此说有误。 关于“宫保鸡丁”的由来,历史学家唐振常先生说:“人们都以为宫保鸡丁是四川菜,其实是清末大吏丁宝桢的家菜,丁宫保是贵州人,因曾任四川总督,川菜名气大过贵州菜,因而归类把宫保鸡丁列入川菜。”(《饮食文化之类》)这里的“总督”与“宫保”,虽然指的都是丁宝桢,却是两个不同的官称。这就引出一个问题,既然此菜因丁氏官四川总督而得名,为何弃“总督”而取“宫保”?
