自古民以食为天,吃的问题一直是人们日常生活中面对的首要问题。近年来饮食文化研究越来越受到关注,考古学对饮食方面的研究亦有许多。本文即从新石器时代的食物材料、食品制作方法以及食品贮备方法等方面对中国新石器时代的食品制备做一综述。一、新石器时代的食物这里首先要理清食物概念。从食品加工的角度来讲,食物分为未曾加工的食物原材料与经过加工的食品两个层次。为了避免混淆不同层次的概念,本文谈到的食物都指可人口的食物原材料。
