Lecithin and other phospholipids are widely found in various tissues of the organism. The content of lecithin in chicken yolk is about 10%. Lecithin is released into the body for digestion and release of choline. Experiments show that, Alkali increases the memory of the human brain. The current method of measuring lecithin is that it is separated from co-phosphatidylcholine by biphasic chromatography and then nitrified and determined by phosphorus molybdenum blue photometry. This method is cumbersome and time-consuming to meet the requirements of practical work. We found in the experiment that lecithin and Fe (III) -CAS (chromium Azurol S) form a water-soluble ternary complex with the maximum absorption wavelength of λ max = 688 nm.
