南瓜中含有的营养成分对多种疾病的防治有着不可忽视的作用。其中南瓜中的果胶、环丙基氨基酸以及微量元素锌、铬(Cr)对防治糖尿病起主要作用。但长期以来,由于人们对南瓜的营养价值认识不够,除部分食用外,还有一部分作为饲料处理,导致南瓜品种资源不能充分利用。本文采用干法消解处理样品,原子吸收光谱仪测定200份不同品种资源南瓜中铬的含量。其中203号样品总铬含量最低(0.015 3 mgkg),233号样品总铬含量最高(0.520 0mgkg),且已超出国家限量标准(≤0.5 mgkg)。通过对试验数据进行聚类分析,从200份不同南瓜品种资源中筛选出一批含铬量适宜的品种,为开展富铬南瓜新品种的选育奠定技术和种质基础,对利用南瓜防治糖尿病也有重要意义。
