为探讨豫南黑猪的种质特性,对豫南黑猪背最长肌脂肪酸组成及含量进行分析测定。采用甲醇-氯仿提取背最长肌脂肪酸,用KOH-甲醇进行脂肪酸甲酯化,利用GC-MS法对豫南黑猪背最长肌脂肪酸组成及含量进行测定。定性定量分析结果表明,豫南黑猪背最长肌脂肪酸至少有18种,含量占优势的脂肪酸为C18︰1、C16︰0、C18︰0、C18︰2、C16︰1、C14︰0;饱和与不饱和脂肪酸之比为0.82︰1。本试验分析确定了豫南黑猪背最长肌脂肪酸的组成及含量,为进一步研究肉脂肪酸与人体健康之间关系打下了基础。
In order to investigate the germplasm characteristics of Henan black pigs, fatty acid composition and content of longissimus dorsi muscle in Henan black pig were analyzed. The fatty acids in the longest muscle were extracted by methanol-chloroform and the fatty acids were methylated with KOH-methanol. The composition and content of fatty acids in the longest muscle of the back of Longnan black pigs were determined by GC-MS. The results of qualitative and quantitative analysis showed that there were at least 18 kinds of fatty acids in the longest muscle of the dorsal muscle of Henan black pig, the contents of C18: 1, C16︰0, C18︰0, C18︰2, C16︰1, C14︰0, The ratio of saturated to unsaturated fatty acids is 0.82: 1. The test analysis identified the composition and content of the fatty acids in the longest muscle of the southern Henan black pig, laying a foundation for further research on the relationship between meat fatty acids and human health.
