目的优化以水为溶剂提取老叶茶叶中茶多酚的最佳工艺条件。方法通过单因素试验研究,探讨各因素对茶多酚提取率的影响,并应用正交试验优化工艺条件。结果单因素试验表明:分别在提取时间为80min、提取次数为3次、料液比为1∶35、提取温度为80℃时,提取率最高;正交试验表明:水提取茶多酚最佳工艺条件为提取时间30min、提取次数2次、料液比1∶35、提取温度100℃为最优工艺。结论该提取工艺简便、快捷,可用于茶多酚的提取,也为茶叶老叶的后续产品研发奠定基础。
Objective To optimize the optimum extraction conditions of tea polyphenols from old leaves with water as solvent. Methods By single factor test study to explore the factors that affect the extraction rate of tea polyphenols, and the application of orthogonal test to optimize process conditions. Results The single factor experiments showed that the extraction rate was the highest when the extraction time was 80min, the extraction times were 3 times, the solid-liquid ratio was 1:35, and the extraction temperature was 80 ℃. The orthogonal experiment showed that the optimum extraction conditions were as follows: The process conditions were extraction time 30min, extraction times 2 times, solid-liquid ratio 1: 35, extraction temperature 100 ℃ as the optimal process. Conclusion The extraction process is simple and rapid, which can be used for the extraction of tea polyphenols, and also lay the foundation for the follow-up product development of tea leaves.
