枣是湖南省五大果树(柑桔、梨、桃、李、枣)之一,产量占第五位。枣的分布广,栽培历史悠久,产区群众在长期的生产实践中选育出了不少优良品种,并积累了丰富的生产经验。 枣果虽小,但它的营养价值很高。据分析,湖南枣子干果含糖48.98—74.4%,每100克鲜果含维生素C221.76—1066.56毫克,有机酸0.16—0.56%,蛋白质0.827%,铁0.00358%(见附表1),是一种滋养补品,为常用中药。鲜果除供鲜食外,还可加工成蜜枣、乌枣、牙枣、红枣、枣酱、枣粉等甜美食品,可代替主粮,可酿酒、制醋、提取食用香精等,综合利用价值很高。
