近几年,在浙江一些地方兴起醉鱼干加工生产,该产品滋味甘美,咸鲜适口,旅游、休闲、就餐皆宜,深受广大消费者喜爱,为淡水鱼的加工和利用开拓了一条新路。其生产工艺流程:鲜活草鱼→去鳞→剖杀→清洗→腌制→清洗→干燥→切段→调味(醉制)→内包装→杀菌→保温、包装、入库、检验→成品。生产要点:鲜活草鱼
In recent years, some places in Zhejiang, the rise of drunk fish dry processing production, the product savory, salty palatability, tourism, leisure, dining all over, by the vast number of consumers, for freshwater fish processing and utilization of a new road. Its production process: fresh grass carp → to scale → profile → cleaning → pickling → cleaning → drying → cutting → seasoning (drunk) → packaging → sterilization → insulation, packaging, storage, testing → finished product.
