中餐服务的教学应当以全面素质教育为核心,以就业上岗能力为重点,以技能训练为特色。操作技能的运用依赖于真实情景的不断训练,在真实的情境下开展项目教学能有效地提高学生的综合服务技能,以适应社会的人才需求。因此,在真实情景下实施中餐服务项目教学对中等职业学校服务型人才的培养具有重要意义。
The teaching of Chinese food service should be based on the overall quality education as the core, with the employment capacity as the focus, with skills training as the characteristics. The use of operational skills relies on continuous training of real situations. Carrying out project teaching in real situations can effectively improve students’ comprehensive service skills to meet the needs of the community. Therefore, carrying out the teaching of Chinese food service under the real situation is of great significance to the training of service-type talents in secondary vocational schools.
